Chicory Root
Defined as a herbaceous plant, chicory belongs to the Asteraceae family.
Always used for its many beneficial properties, chicory is recognizable by the presence of light blue flowers. This plant can reach a maximum height of up to one and a half meters.
There are several varieties of chicory that are distinguished from each other by the size, color and shape of the leaves. In most cases chicory has large green leaves, but in some cases they can be variegated or red
Known for stimulating concentration, it is useful for hair, skin, kidneys and to combat drowsiness.
Chicory has a laxative power, stimulates the activity of the pancreas and liver and, thanks to its properties, helps regulate the amount of glucose and cholesterol in the blood.
Within this plant there are both sugary and bitter substances. As for mineral salts, chicory is rich in potassium, calcium and iron; the presence of vitamin C-E, vitamin B and vitamins P and K is also high.
Vitamin C: fundamental for our immune system, for its antioxidant function it is involved in the synthesis of collagen and is important for the assimilation of iron by red blood cells.
Vitamin E: another fundamental fat-soluble antioxidant, essential to reduce free radicals and to ensure the maintenance of cellular integrity. Its deficiency can provoke hemolysis of erythrocytes, muscle and neuronal problems.
Rich in micronutrients, it also has a good fiber content, useful for improving our intestinal regularity. Chicory also recognized digestive properties: it is considered a natural purge, because of its laxative effects.
The most common use of chicory concerns its leaves, to be added fresh in the preparation of salads. Chicory leaves can be consumed in any case both raw and cooked and their collection is preferable to take place before flowering, as the chicory leaves are likely to dry out easily after the appearance of flowers.
For medicinal purposes, chicory and in particular its leaves and root, are used to prepare decoctions and syrups as well as face creams.
