Dehydrated fruit is rich in beneficial properties. This variety of fruit is deprived of water without losing nutrients and health benefits. Strawberries are a product prepared from fresh strawberry , cut and subjected to dehydration by hot air.

Strawberries are fruits of plants belonging to the Rosaceae family and the genus fragaria. Its botanical name is in fact fragraria vesca.  The particular scent comes from its pulp, we are talking about pulp and not fruit because, in reality, the edible red part is a false fruit, a receptacle in which the real fruits represented by oval achenes are inserted, that is, those small seeds of yellowish or brown color that dot the pulp.

According to mythology, this sweet red fruit was loved especially by the Romans, especially during the festivals dedicated to Adonis. It is said that at her death Venus, goddess of love, wept many tears that arrived on earth, turned into small red fruits in the shape of a heart.

\n

The strawberry has always been considered the fruit of passion for various reasons, for its red color, but also its appearance, this food for its shape is in fact also called \"heart fruit\". 

\n

Rich in antioxidant properties, strawberries also play an important role in the field of phytotherapy. The drug consists of the rhizome (underground part of the stem), which is drunk to help the body purify itself and to stimulate the appetite, while used for gargling it has anti-inflammatory activity on the oral mucous membranes. The infusion of leaves has astringent properties for the intestines.

For their precious active ingredients, strawberries have multiple functions:

  • - Strengthen the immune system;\n
  • - Counteract cellular aging and the formation of wrinkles;\n
  • - They help metabolize fats and therefore are enemies of obesity;\n
  • - Counteract water retention and consequently hypertension and the formation of cellulite;\n

Strawberries, as well as other red fruits (Goji berries, Blueberry, Cherries), have the characteristic of concentrating within them high percentages of antioxidants, substances particularly useful for the well-being of the capillary and venous walls, capable of activating the defense systems and protecting the body from stress, acting against cellular aging (rich in vitamin C content).

Strawberries are composed of 90% water, for this reason they are able to hydrate the body without weighing it down with too many calories. In addition, the presence of numerous enzymes sets in motion the metabolism of fats helping the body to lose weight more easily. These fruits are also attributed dietary capabilities for the presence of fiber that increases the sense of satiety and makes you absorb less fat and less sugar.

MINI YOGURT PLUMCAKE WITH DEHYDRATED STRAWBERRIES

INGREDIENTS:

\n
  • - 3 medium eggs\n
  • - 150 g vanilla-flavored yogurt\n
  • - 150 ml seed oil\n
  • - 250 g granulated sugar\n
  • - 180 g flour for cakes\n
  • - 70 g potato starch\n
  • - 8 g baking powder\n
  • - dried strawberries \n
  • - icing sugar to serve\n

PREPARATION:

The first step is to separate the yolks from the egg whites. In the bowl with the yolks add the yogurt, oil and sugar. Start whipping with an electric whisk until they become light and fluffy. In the whole add the sifted powders (yeast, starch and flour). Finally, add the whipped egg whites and with movements from bottom to top in order to mix the two compounds. Add the dried strawberries and pour the mixture into small single-portion plumcake molds.

\n

Bake in a preheated oven at 180 degrees for about 25-30 minutes. Once cooked, let it cool on a cake rack and sprinkle with icing sugar.

\n

A crumbly biscuit base, a layer of frothy and aromatic cream and finally a sweet coulis coating made with fresh strawberries: this is how our mini cheesecakes are presented. Refined delights in single-portion format that are inspired by the recipe of cheesecake without cooking, a delicious variant of the traditional cold-made cheesecake, perfect for all those who in the hottest season prefer not to turn on the oven, but not for this reason they are willing to give up a delicious and captivating dessert. You will soon discover that these mini cheesecakes are so simple to prepare that they become a summer dessert for everyone, even in other versions such as the melon one!

MINI CHEESECAKE WITH FRESH STRAWBERRIES 

\n

INGREDIENTS

\n
  • - Digestive Biscuits 150g\n
  • - Butter 60g\n
  • - Spreadable cheese 125g\n
  • - Ricotta 125g\n
  • - Icing sugar 35g\n
  • - Fresh liquid cream 100g \n
  • - Gelatin sheets 8g\n
  • - Vanilla pod 1 \n

For coverage:

  • - Brown sugar 30g\n
  • - Gelatin sheets 4g\n

To garnish:

  • - Strawberries 2\n
  • - Mint to taste \n

\n

PROCEDURE

\n

To make the mini cheesecakes first take care of the base: in a mixer pour the dry biscuits and blend them finely, then transfer them to a bowl, add the melted butter and mix with a wooden spoon so as to obtain a moist mixture.

\n

Place coppapasta with a diameter of 7.5 cm and with a border of 4.5 cm on a tray lined with parchment paper, pour into each 1/4 of the biscuit crumbs and compact the mixture well with the back of the spoon to form the base. Place everything to cool in the refrigerator for at least half an hour. Now take care of the cream: in a bowl with cold water soak the gelatin sheets for about 10 minutes, so as to soften them.

\n

Take 50 g of cream from the total dose and place it in a saucepan to heat, once the gelatin has softened, squeeze it and melt it in hot cream over low heat stirring with a whisk so that lumps will not form. Let cool.

\n

In a bowl pour the ricotta, spreadable cheese and icing sugar, whipped with electric whisks to mix and then flavored with the seeds of the vanilla pod.

\n

Also pour the remaining dose of cream and the one into the saucepan, where you have dissolved the gelatin. Continue to whip the mixture with a whisk until it is soft and fluffy.

\n

Take back the molds with the bases, fill them to the edge with cream, leveling the surface with the back of a spoon. Let the mini cheesecakes firm for at least 4 hours in the refrigerator.

\n

While the sweets firm, prepare the coulis: wash and dry the strawberries, then cut them into pieces and pour them into a saucepan, add the brown sugar and cook over low heat for minutes, after cooking the strawberries will be soft. Meanwhile, let the gelatin soften in cold water.

\n

When the strawberries are ready, pass them still hot through a colander, press with the spatula and collect the puree in a bowl. Add the squeezed gelatin and mix with the whisk to dissolve it carefully. Take the mini firmed cheesecakes and distribute the coulis in the 4 molds. Put back in the fridge to firm for 1 hour and then serve your mini cheesecake garnishing them with fresh mint leaves and slices of fresh strawberries!
