Compared to fresh fruit, dehydrated fruit loses water and concentrates fiber, sugars and minerals, thus becoming a nutritious, satiating and not excessively caloric snack. It is a product prepared from fresh pineapple, peeled, cut and subjected to dehydration by hot air.
The Pineapple (Ananas comosus) is a fruit native to the tropical zone between Central America and South America. This plant prefers a consistently warm climate throughout the year.
The pineapple is covered with a brown leathery rind and the fruit inside has a very juicy, sweet and slightly sour pulp, pleasant to the taste and with an intense and characteristic fragrance. Surrounded by pulp, in the center there is a fibrous stem, hard and therefore not pleasant to consumption.
The Indians called this fruit "anana" or "perfume", while the conquistadors believed that it was a sort of tropical "piña", indeed Indian and even in Europe it was taken to call it "royal pine cone".
This fruit can be consumed in several ways: fresh, cooked, juice or preserved.

Pineapple cake and yogurt raisins
For the cake:
- 250 g flour 00
- 50 g potato starch or cornstarch
- 200 g of granulated sugar (also 180)
- 3 medium whole eggs
- 100 g dehydrated pineapple
- 3 tablespoons of sultanas
- 2 jars of pineapple flavor yogurt (not cold fridge)
- 1 tablespoon sunflower oil
- 1 sachet of baking powder
To decorate:
- 1 box of pineapple in syrup of 500 g
- Candied cherries or sour cherries in syrup to taste
- Icing sugar
- A few tablespoons of Rum
PROCEDURE:
In the bowl of the mixer whip the sugar and whole eggs in soft cream. In a second bowl insert the pineapple and add warm water mixed with Rum until all the fruit is covered. Let it soak for at least 15 minutes, stirring occasionally. Do the same with raisins.
Turn on the oven in static mode at 180 ° grease and flour the mold (I from donuts of 26 cm). Sift the flour with the starch and baking powder, and add them in spoonfuls to the swollen mass of eggs and sugar alternating with yogurt and at the end also add the oil.
Let the pineapple drain well then pass it in the chopper for a few seconds, you will get a mixture much easier to mix with the dough without it being appreciated by those who do not like it. Also dab the raisins and then add it together with the pineapple to the dough stirring with a spatula with grace.
Pour everything into the dough and bake for about 45 minutes in the oven. Once the time is over, let the cake cool with pineapple and raisins. Drain the pineapple from the syrup and sprinkle the icing sugar.
