\n

\"Sunflower seeds\" are the fruits of Helianthus annuus, an annual plant belonging to the Astaraceae family. 

\n

Sunflower seeds, as well as pumpkin seeds, flax seeds and hemp seeds, as already mentioned, represent foods rich in nutrients, despite their small size, they help the body to integrate minerals, vitamins and essential fatty acids. They can be considered as a natural supplement of beneficial elements for the health of our organism, among which we can find both essential fatty acids and vitamins.

Sunflower seeds come, of course, from sunflowers! Yellow flowers produce small edible seeds of gray or green color and are found naturally in dark green, gray or black shells called \"shells\". 

\n

There is evidence that sunflowers were grown by Native Americans until 3000 BC! 

\n

However, they were discovered and brought to Europe, and then spread to Russia, where they were initially marketed as a crop and harvested for their oil. It wasn\'t until the late 1800s that they were brought back to North America where they are popular for their oil, seeds and as a nice addition to your garden.

Properties and Benefits 

\n

Sunflowers and sunflower seeds are an excellent source of many vital nutrients, including vitamin E, also known as gamma-tocopherol. These seeds contain in themselves a complex of vitamins and useful elements, which are essential for humans.

\n

Vitamin E is a powerful antioxidant found in many nuts and seeds, but sunflower seeds are one of the best natural sources of this antioxidant, which works hard to fight free radical damage within the body. 

\n

Vitamin E is a fat-soluble vitamin, which means that it must be consumed with fat to be absorbed by the body\'s best abilities; this makes it even more beneficial that sunflower seeds provide essential fatty acids in addition to vitamin E. Vitamin E antioxidants are found in cholesterol particles and help prevent free radicals from dangerously oxidizing cholesterol.

Sunflower seeds are therefore a unique food, rich in nutrients. In addition to Vitamin E, we find copper, B vitamins such as thiamine, phosphorus, selenium and much more.

Sunflower seeds, like all types of nuts and seeds, provide a healthy source of essential fatty acids; their specific fatty acids are in the form of linoleic acid. These represent an excellent source of fiber, amino acids (especially tryptophan) that make up the building blocks of proteins, B vitamins, phytosterols and more.

Although we have been led to believe that they are fat, they can lead to unwanted weight gain, but this is absolutely not true. Eating healthy fats actually leads to a healthy cardiovascular system, stable body weight, and reduced levels of inflammation at the body level.

Frequent consumption of sunflower seeds has been shown to help balance cholesterol levels and reduce hypertension. The presence of antioxidants and anti-inflammatory compounds, allow to reduce oxidative stress and the presence of harmful free radicals inside the body.

Sunflower seeds also provide a high amount of magnesium.

\n

Magnesium plays many important roles within the body: it helps balance the calcium/potassium ratio in cells. The latter is crucial for cardiovascular health in general and helps maintain healthy blood pressure.  Magnesium helps maintain healthy skeletal structure and prevent conditions related to loss of bone mineral density such as osteoporosis.

From a vitamin standpoint, sunflower seeds are a rich source of B vitamins, including vitamin B5, which is also known as pantothetic acid. Like other types of B vitamins, vitamin B5 plays an important role in energy metabolism, since it acts by producing energy within our body. Pantothetic acid also plays an important role in fat synthesis, hormone regulation and maintaining healthy brain function.

Recipes

Sunflower seeds can be taken naturally: 2 tablespoons a day or even passed in the oven are enough to have more crispy and golden seeds.

In addition to being a healthy and tasty snack, pumpkin seeds can be used in different ways. Try your seeds in muesli in yogurt in the morning, in bread dough and on focaccia, in salads or in soups as a final decoration.

They are also excellent for the preparation of biscuits and energy bars, along with other seeds and dried fruit.

Sunflower seeds in first courses 

\n

The pasta with sunflower seeds and zucchini is perfect to be served in summer, to make an outdoor lunch with friends appetizing. If you want a good and refined course, you can prepare a delicious risotto with sunflower seeds and cheese fondue, a delicacy that will conquer everyone at the first taste.

\n

In addition, by combining these seeds with dried fruit, you can prepare a particular pesto with which you can accompany the first courses, but also legumes, meat and fish or vegetable main courses.

\n

This pesto is very simple to prepare, you need: 

\n

- 50 g of rocket leaves;

\n

- 20 g of pistachio;

\n

- 30 g of sunflower seeds;

\n

- 50 g of extra virgin olive oil;

\n

- Half a clove of garlic.

\n

\n

Clean and wash the rocket leaves. Dry them with absorbent paper or a clean cloth and transfer them to a mixer glass (or a suitable container). Add the oil, garlic, a pinch of salt, pistachios and sunflower seeds. Blend everything until a nice cream has formed.

\n

For this recipe you can also use basil, instead of arugula; or totally replace the pine nuts of the classic recipe with sunflower seeds.

\n

On a cold autumn evening a warm pumpkin soup, with balsamic vinegar and sunflower seeds is what it takes to warm up and relax.
