History and Curiosities 

Tiny precious grains, capable of giving life to countless seedlings. Mustard is a versatile cruciferous plant that belongs to the Brassica family just like broccoli and cabbage. Native to the temperate zones of Europe, it was among the first crops cultivated in the region. For millennia, the mustard plant has been cultivated quite commonly in North Africa, Asia and Europe more like a herb, and was even popular among the ancient Greeks and Romans. The Egyptians, the Jews and many other peoples resorted to its many properties. 

Three variants of mustard, namely white mustard (Brassica alba,) black mustard (Brassica nigra) and brown mustard (Brassica juncea), have gained more popularity than the others and are commercially grown and used for their young stems of flowers, leaves and seeds.

White mustard or sometimes referred to as yellow mustard has a more delicate flavor and is normally used in the preparation of the famous American yellow mustard dressing.

Black mustard is popular for its intense aroma and flavor, while brown mustard offers a pungent and sharp taste.

Black mustard (Brassica nigra), has very dark, almost black seeds. These seeds promote the blood supply and are therefore useful for blood circulation, fever and colds, for this: 

- An infusion of mustard helps in case of colds and fevers and stimulates blood circulation;

- A poultice of mustard seed flour (to be mixed, if you want, also with that of flax seeds) is useful against rheumatism, arthritis and muscle pain.

The yellow mustard takes its name from the scientific Brassica Species, belongs to the Cruciferous family and grows spontaneously in most European regions. Mustard, in addition to being known for the beneficial properties it enjoys, is very frequent in different varieties of recipes and sauces. In addition to the mustard seeds, the leaves can also be used to flavor soups and creams, a custom less practiced in Europe, but widely used in the countries where it originates. 

Properties and Benefits 

These small yellow seeds have a typical pungent taste and are rich in phyto-nutrients, antioxidants, minerals, vitamins E and B, calcium, manganese, iron and zinc. They stimulate circulation and are able to perform a purifying and laxative action. According to what has been said, in fact, it is claimed that an infusion of mustard can help a lot in case of colds and fevers, stimulating blood circulation and acting against muscle pain and rheumatism. Mustard seed oil is used in Ayurvedic medicine to practice friction against rheumatism and neuralgia.

But it is not only good, mustard is also rich in carbohydrates and proteins, therefore excellent for vegetarian and vegan diets.

The mustard plant carries a whole range of useful components through its various edible parts. Mustard is a source of vitamins (B1, B2, B3, vitamin C, E, K and J) and minerals (including especially calcium and phosphorus). Mustard seeds also contain 5% water, 29% carbohydrates, 25% protein, 23% fat, 14% dietary fiber and 4% ash.

Mustard seeds also offer therapeutic relief in contact dermatitis. Investigative research has suggested that consuming its seeds helps heal symptoms associated with contact dermatitis such as tissue healing and reduced ear swelling.

These seeds have also been evaluated in the treatment of cold and sinusitis problems. Yellow mustard is a wonderful decongestant and expectorant that helps to release mucus in the passage of air. For centuries, several home remedies have involved the use of mustard seeds or oil for the treatment of a number of breast-related ailments. They include adding ground mustard seeds in a soaking foot to clear congestion in the respiratory organs and gargling with tea made of mustard seeds to calm the sore throat, to name a few. The heating qualities of this plant penetrate deeply into the tissues and clean the accumulation of excess mucus.

Not only in the medical field, but also in the cosmetic one, mustard seeds turn out to be a great ally. In particular, these seeds are used for the care and beauty of skin and hair.

Henna leaves boiled with mustard oil help stimulate healthy hair growth. Mustard seeds, roasted in sesame or coconut oil, enrich the resulting sifted oil and make it an effective cure for acne and promote a lighter complexion.

Did you know that mustard is also great for cleaning the house. Mustard seed powder can be added to the water with detergent to effectively disinfect and clean surfaces and floors. 

Recipes

Among the most famous recipes we could not include the recipe for the real mustard sauce.

The flavor, particularly spicy, allows you to use the sauce obtained, to enrich different dishes while maintaining a moderate caloric intake, indicating therefore for those who follow slimming diets.

How to make mustard sauce?

INGREDIENTS:

- 50 gr of yellow mustard seeds

- 50 gr of dark mustard seeds

- 80 gr water

- 80 gr of apple cider vinegar

- 30 gr raw cane sugar

- 4 tablespoons extra virgin olive oil

- A pinch of salt

PREPARATION:

Place the mustard seeds in a container with apple cider vinegar and let it rest for a whole night so that the seeds absorb the vinegar.

Place the seeds in a blender, add the other ingredients except the oil and operate. As soon as you notice that the mixture becomes soft, begin to add the oil little by little.

Continue or not to blend the sauce depending on the greater or lesser creaminess you want to obtain and then add a pinch of salt.

Nothing complicated, but a super fast recipe. Store your sauce in the refrigerator, in a glass jar, for about 2 months.

CHICKEN MORSELS IN MUSTARD SAUCE 

INGREDIENTS (x2 people)

- 300 gr of chicken breast

- 2 teaspoons mustard

- 4 teaspoons of honey

- Milk, salt, oil to taste

- Flour

PREPARATION

Prepare the chicken breast by cutting it into small chunks. Flour them and remove the excess flour. At the same time in a flap fry for a very short time, two teaspoons of oil. Insert the chicken nuggets and brown them well for a few minutes, then add salt, mustard sauce, milk and honey and mix everything. Just enough time to thicken the cream and your dish is ready to serve.

Mustard, whether in seeds or powder, is not recommended for those who may have allergic reactions. 

Even its oil or flours obtained from mustard seeds, can cause discomfort and irritation. For this reason it is always a must to consult a doctor. 

How to store mustard 

It is recommended to store mustard seeds in a closed container, inside a pantry protected from light and heat.
