Scented Jasmine rice

ORIGIN: Thailand 

Fragrant Jasmine rice is a type of rice grown in Thailand, where its name is Kao Hom Mali, a term that literally means "jasmine aroma rice", which is why it is also called "fragrant rice". With a completely subtle and delicate floral aroma, it has a soft and sticky conformation with cooking.

Jasmine rice visually resembles basmati rice, coming from India and Pakistan: it has tapered grains, longer and thinner than rice commonly grown in Italy, such as arborio or carnaroli, and has an ivory white color. The grains of Jasmine rice, however, are shorter and thicker than Basmati rice. 

Jasmine Rise (Jasmine Rice) is the most used rice by the Chinese, traditionally it was steamed with an absorption technique, that is, going to cook it in a minimum amount of water that is totally absorbed by the rice during cooking. 

The small presence of amylopectin, a component of starch, makes jasmine rice one of the varieties of rice in the world, which during cooking, keeps the grains well separated from each other, since the starch, gelling in cooking, acts as a glue. For this reason, jasmine rice is ideal for the preparation of rice salads or side dishes, but not to obtain creamy risottos, for which a different variety of rice is more suitable. 

Preparation:

  • Pour 3 cups of rice (for 4 people) into a container;
  • Rinse the rice once;
  • Add the water to the container (3.6 cups) and a tablespoon of salt.
  • Then insert the rice into the appropriate cooking pot. Do not lift the lid and stir the rice during cooking as it would decrease its fragrance.
  • When the rice is ready, mix with a fork so as to make it soft; serve hot and fragrant.
