DESCRIPTION:

perennial shrub, up to 10 m of height, and for cultivated species about 2 m, with alternate leaves, dark green and glossy, ovates odovato-lanceolate, petiolate, coriaceous, convex, with the toothed and whole margin at the base. It has a whole leaf and is very light, hence the quality PAI MU TAN (WHITE PEONY). The leaf twigs of gray green color. The flowers are small, whitish, axillary, solitary and are grouped in pairs or three in three, with a corolla that has from five to nine unequal petals. The fruit is a trigonal or spheroidal capsule, with three cells and one or two seeds in each. It is a type of unfermented tea (therefore GREEN) whose process of wilting and subsequent drying takes place immediately after harvesting without any intermediate step. The leaves are harvested by hand and stretched out on racks under weak sunlight in a ventilated environment. When the leaves have lost 70-80% of the water contained, they are dried on low heat. During drying, great experience is required to judge the amount of water lost during the final drying. In this sense, white tea is by far the most natural. In appearance the leaves have a smooth or flake appearance and the color in the cup is bright, clear. For the Silver Tip Pekoe or Flovery Pekoe quality, the most valuable quality, only the leaf buds are harvested, before they open.

Harvesting is carried out at dawn, when the shoots are still half-closed and fresh. It lasts a maximum of one week. For these leaves there is no fermentation process, but they are only dried in the air. 

This tea is obtained only from the most tender leaves of the plant and this makes its slimming, anti-aging and protective properties of the circulatory system powerful.

White Tea: preparation 

Since the leaves of this tea are very delicate, for the preparation you have to be a little careful.

The temperature of the water is fundamental, it must never exceed 70 degrees, a good method is to let the water stand 5 minutes after boiling. Doses are one teaspoon for each cup of water. The infusion time should not exceed 2 minutes, the color of the water should be pale yellow, filtered with a simple strainer and sweeten to taste, perhaps with a little honey
