Pearl barley
Barley (Hordeum vulgare or Hordeum sativum) is a plant that belongs to the Gramineae family. Barley has numerous remineralizing and purifying properties for our body. It is a cereal widely used and always present in our kitchens, from breakfast to dinner.

Barley salad with anchovies, shrimps and cherry tomatoes
Ingredients:
- Pearl barley 300 g
- Shrimp 200 g
- Extra virgin olive oil 5 tablespoons
- Cherry tomatoes 150 g
- Basil
- black pepper
- Anchovies in oil fillets 8
To prepare the barley salad with anchovies, shrimps and cherry tomatoes, start by boiling the barley in 1.5 liters of boiling water. Meanwhile, wash the cherry tomatoes and cut them into quarters, then melt the anchovies in the oil placed a few moments on the fire; add the shrimp and let them blanch for a few seconds. When the barley is cooked, (remember that it must remain a little crunchy), drain it well and sauté it in the pot with the ingredients prepared previously. Remove everything from the heat, let cool, and then add the cherry tomatoes and basil leaves chopped with your hands; add a drop of raw oil, pepper to taste and mix well. Let stand and cool completely, then place the barley salad with anchovies, shrimps and cherry tomatoes for at least an hour in the refrigerator.
