Dehydrated melon

Compared to fresh fruit, dehydrated fruit loses water and concentrates fiber, sugars and minerals, thus becoming a nutritious, satiating and not excessively caloric snack. Melon is a summer fruit rich in properties. Its scientific name is Cucumis melo and belongs to the Cucurbitaceae family of which watermelon is also part.

Product prepared from fresh melon, peeled, cut and subjected to dehydration by hot air.

Ingredients:

200 g of dry biscuits digestive type

\n

100 g butter

\n

\n

Ingredients for the filling:

\n

500 g of over-the-counter common ricotta (replaceable with mascarpone or other cream cheese)

\n

120 g granulated sugar

\n

220 g whipped cream

\n

10 g gelatin sheets

\n

1 tablespoon vanilla extract

\n

lemon drops

1 sweet and ripe cantaloupe melon

Ingredients for coverage:

250 g melon cut chunks

\n

60 g of granulated sugar (adjust according to the sweetness of your melon, increase or decrease to taste)

4 g gelatin sheets

\n

PROCEDURE

\n

For the creation of the biscuit base takes 3 stages:

  • Melt the butter in a saucepan.
  • \n
  • Finely chop the biscuits in a mixer and add them to the melted butter. Mix everything up and incorporate them well.

  • Coat a mold of 20-22 cm in diameter in a circle that can be opened with parchment paper. Cut out and cover the circle with strips of parchment paper. Pour the crumbled biscuits and compact the base well with the back of a spoon. Let it rest in the refrigerator for about 30 minutes.

Once the base is created, you can move on to the filling. It is therefore necessary to cut 100 g of melon into chunks and set aside. Place the gelatin sheets in cold water for about 10 minutes. In a bowl soften the ricotta with granulated sugar, a few drops of lemon and vanilla and mix with a whisk. At the same time in another bowl, whip the cream until stiff, making it not too firm.

Just heat in a saucepan 3-4 tablespoons of milk, turn off the heat and add the gelatin sheets, stir to make it dissolve completely. Add the cream to the ricotta mixture and mix. Finally, add the gelatin sheets, being careful, however, the mixture must not be too hot otherwise lumps will form. Finally, add the melon touched in chunks. Pour the filling on the biscuit base and put in the refrigerator to rest for at least 4 hours.

Last part: the cover!

  • Obtain 250 g of melon cut into very small pieces.
  • \n
  • Soak in cold water 4 g of gelatin sheets.
  • \n
  • Transfer the chopped melon to a saucepan along with 60 g of granulated sugar.
  • \n
  • Cook over low heat for about 5 minutes, it will only have to soften.
  • \n
  • Blend everything with an immersion mixer or a food processor.
  • \n
  • Add the gelatin sheets when the mixture is still warm and stir making it dissolve completely.
  • \n
  • Pour the mixture on the surface of the melon cheesecake and let it rest in the refrigerator for about 2 hours.

  • After the necessary rest time, at will you can add slices of fresh melon on the entire surface.

  • The melon cheesecake is ready to be enjoyed. Store the cheesecake in the refrigerator well covered!

Conservazione

Successivamente all’acquisto di Dehydrated melon se si intende conservare a lungo, bisogna riporre il prodotto in luoghi freschi e asciutti, al buio, lontano da fonti di calore e umidità.
La condizione ideale di mantenimento è in ambiente refrigerato, la refrigerazione infatti prolunga la conservabilità. Il prodotto può anche essere conservato senza problemi a temperatura ambiente durante la stagione invernale date le basse temperature. Durante l’ estate invece è consigliabile conservare il prodotto in frigorifero o in ambienti il più freschi possibile, in quanto l’aumentare delle temperature potrebbe favorire il deperimento dei prodotti.
Il contenitore ideale dentro cui riporli è il vetro. Grazie alla sua costituzione infatti è impenetrabile ad agenti chimici e gassosi, e avendoottime capacità isolanti termiche mantiene per un tempo più lungo la temperatura iniziale rispetto agli altri materiali. È inoltre costituito esclusivamente da sali minerali, per cui non esiste il pericolo della cessione di materiali organici. Se il vetro è colorato tanto meglio:utilizzando vetri colorati si impedisce l’ingresso di alcune lunghezze d’onda di luce (inclusa quella ultravioletta) e quindi alcune caratteristiche nutrizionali ed organolettiche rimangono inalterate. Essi ci vengono in aiuto anche qualora il prodotto si trovi in condizioni non ideali, ad esempio esposizione al calore o al sole.
È importante anche il tipo di chiusura del contenitore: un tappo ermetico fa si che l’alimento sia protetto da un eccessivo contatto con l’ossigeno che può condurre a ossidazione lipidica e che può essere essenziale per i batteri aerobi.
L’ambiente è sempre bene che sia ben areato: ventilando i locali si mantiene sotto controllo l’umidità interna che fuoriesce dalle finestra, garantendo il giusto equilibrio, il che aiuta a sfavorire l’insorgere di muffe.
