The bean, known in the botanical field as Phaseolus vulgaris, is an annual plant, belonging to the Legumes family. Let's find out more about the characteristics of the red bean. 

The red bean, also called Dark Red Kidney (DRK), has a bright red color and has a floury consistency. Red beans are valuable allies for the health of the body. Containing minerals and trace elements, they therefore present themselves as a very energetic and nutritious food.

Their skin is rich in proteins and starches, while in their pulp we find a lot of iron, calcium, phosphorus, vitamins (B1, B2 and PP). They are also rich in fiber and other substances that can keep our immune system, brain and bones healthy. These legumes are valuable for those suffering from anemia and for all people who, for some reason, are potentially in shortage, such as vegetarians and vegans. Red beans also help the formation of enzymes useful to the liver and have purifying and diuretic properties that facilitate kidney processes.

Their taste is sweet, similar to that of chestnuts and sweet potatoes and in order to cook them, they must be left to soak at least one night before cooking. They are widely used for the preparation of Tex-Mex dishes. They are perfect for soups and purees, but not only: recipes with red beans range from cold salads to side dishes with rice and cereals, from vegetable meatballs to the preparation of desserts and jams.
